Chicken with Stuffing (Lancaster Amish Wedding Chicken)

12 Easy Amish Chicken Recipes - Amish Heritage (8)

The Amish in Lancaster County have a traditional wedding meal. This Amish chicken and stuffing (chicken/turkey roast, better known as "Roasht") is served at every wedding.

And not only is it served at weddings, but it's also a popular holiday dish.

"Roasht" is typically made with turkey, although it can easily be made with chicken pieces when you're cooking for only a few people.

My mom used to make a giant bowl of stuffing, then she stuffed the turkey with some of it and baked it at a low temperature overnight. The next day she picked the meat off of the bones, cut it up, and mixed it with all the stuffing.

So with one turkey, she made a huge roaster full of "Roasht" to serve a large gathering of people. However, this recipe uses a whole chicken and is cut down to family size.
